We produce this soft, washed-rind cheese as the weather starts to change and the days get shorter. The late season milk is perfect for this rich and pungent wedge. The sharp aroma gives way to warm, mushroom notes and a creamy texture under the rind. This year we opted for pure goat milk version of this cheese.
